Shower, get dressed and then out the door to run errands.</p>

Used to brew a lot, getting back into it as feel in need of a boost to the old gut brain. </p><p>Intrigued by water <a href="https://mastodonapp.uk/tags/kefir" class="mention hashtag" rel="nofollow noopener noreferrer" target="_blank">#<span>kefir</span></a> crystals that many sellers also have. Anyone use them here?</p>
Rhyothemis<p>Arrgh!</p><p>I thought I had gotten around the issue by buying 3 32 oz cartons of 365 brand organic milk.</p><p>I received my order (I still shop online for WH) and - nope. It's UHT.</p><p>So the kefir will not be happy. Rhyothemis<p>well, that sucks...</p><p>I finally got around to looking up whether there is significant PFAS contamination in Alamance Co., North Carolina. There is - from a textile plant and a old munitions plant in Burlington. PFAS are in the soil, groundwater, Haw River water, and drinking water.</p><p>I knew about contamination from the Chemours plant and Fort Liberty (formerly Fort Bragg) in Fayetteville - but did not know about Burlington.</p><p>A couple of weeks ago I ordered groceries from Whole Foods and they were out of their 365 brand organic milk - which is not ultra high temperature (UHT) pasteurized. I make kefir with it, and kefir won't culture properly with UHT milk. It used to be that UHT milk was mostly in shelf stable products like Parmalat, but now it seems like most of the milk, especially organic milk, is UHT - probably because of its longer shelf life.</p><p>So instead I bought a gallon jug of milk from a dairy located in Alamance Co.; their milk is vat pasteurized (a lower temperature method) and not homogenized, but not organic (not that that makes a difference if their water is contaminated). It was pricey - but it tasted so much better. I did not find it difficult to shake it up. </p><p>I won't go into the different properties of milk regarding different pasteurization methods and homogenization. It is an interesting and complex topic. Are there implications for health? A controversial topic - IMO there probably are. The kefir microorganisms can tell the difference. Someday I will write about this, if I ever get the time.</p><p>I need to make another grocery order and another milk buying decision. Rhyothemis<p>I've been making kefir for a few weeks. It did not really 'work' until I switched from using UHT goat milk to regular pasteurized cow milk. UHT alters milk proteins and this can cause problems with fermentation. I'm currently getting good results mixing UHT goat and lowfat cow milk at around 1:3 .</p><p>I also recently tried doing a 2nd ferment with lemon peel. I juice the lemons and save the peel by freezing. After sifting out the kefir grains I add in the frozen peel of half a lemon and let it ferment for another 12 hours.</p><p>With that amount of peel, there is a bit of a bitter undertone - but I like the lemon flavor and overall quality of the kefir.</p><p>My sinuses seem to open up immediately when I drink it.</p><p>I also noticed something interesting when I drank some while eating a radish.
